Banana bread with blueberries


- 2 ripe bananas
- 120 g maple syrup
- 45 ml soy milk
- 4 tbsp /16 g coconut oil
- 1 tbsp apple cider vinegar
- 40 g oat flakes
- 20 g ground linseed
- 180 g wholemeal flour
- 2 tbsp walnuts
- 2 tbsp cashews
- 1.5 tsp baking powder
- 0.5 tsp cinnamon
- 100 g blueberries
- Pinch of salt

How to get started

Preheat the oven to 180°C top/bottom heat.

Crush the walnuts and cashews and mix them in a bowl with the flour, oatmeal, linseed, baking powder, cinnamon and a pinch of salt.

In another bowl, mash the bananas with a fork to a puree. Heat the coconut oil (e.g. in the microwave) so that it becomes liquid. Add it to the mashed bananas together with the soy milk, maple syrup and apple cider vinegar. Mix all gently by hand.


Add the banana mixture to the first bowl and mix everything by hand (not too long). Finally, mix in the blueberries.

Pour the batter into a greased loaf tin and drizzle with a little maple syrup.

Bake at 180 °C for 30 minutes. Then bake for a further 20 minutes at 150 °C.
